1 sheet defrosted puff pastry – unfolded
8 oz wheel of Brie
1 jar Yes She Cans Peach Jam
1 tsp dried thyme
1 beaten egg
Fruit and crackers for serving
Preheat oven to 425F. Place the puff pastry in the center of parchment paper lined cookie sheet. Place the Brie in the center of the dough. Pour the peach jam over the brie and sprinkle with dried thyme. Fold the edges of the puff pastry over the brie, sealing the edges by dipping your fingers in the beaten egg and crimping the dough edges. Flip the pastry upside down so the dough is on the bottom. Brush with the remaining beaten egg. Bake for 25 minutes or until golden brown. Let stand for 8 minutes before serving with fruit and crackers.
